
Summer is officially here…I know because anything over 70 degrees and I start to panic. To “celebrate” the summer season, I decided to make a watermelon pancake! Note: using real watermelon in pancake batter does NOT color it. It only makes a huge mess and wastes otherwise good pancake batter
For this one I used some strawberry jam for coloring, it gave it a nice flavor and color. The seeds are colored with cocoa powder.

Not sure how you feel about non-batter additives, but some chocolate chips would make great “seeds”! Maybe make a regular round red choclate chip pancake and once it sets up a bit cut it in half and add the green?

These are amazing to look at and it’s great seeing your daughter enjoying them (so they must be yummy.) All I know is my wife said I now have to try and master a basic round pancake and there should be no excuses after seeing these masterpieces.
Jim, just finished reading through your ‘pancake diaries’ and have to say I am really impressed at your creations. But- I must say that the bigger creation here is your relationship with your daughter. This sounds like a really cool father-daughter thing you got going on. The (stickie) bond between the two of you will last forever (sorry for the pun). Keep it up- even when she outgrows pancake creations!!!
This is really cute. My brother and I have great memories of our dad making pancakes for our family on the weekends and he is still the pancake maker extraordinaire. He never got this creative but what wonderful memories we have, as I am sure your daughter will, of breakfast courtesy of, and with, dad.

In Russia we make pancekes bigger, thinner then your traditional ones here.But we make tubes or “envelopes” from them! We can put some cream cheese with raisons inside! Tasty!

Jim, this brings back memories for my grown children and me. Every Thanksgiving I would make turkey shaped pancakes with white batter flavored with vanilla for the tummy, brown choclate batter for the head and feathers and a red wobbler flavored with cherry juice. The eys were mini choc chips
We traditionally had turkey pancakes and watched the Macy parade on TV. This tradition has carried on into my grandchildren.

First, I know it’s been said many times, but your daughter will cherish this type of thing foever….Probably already telling all her friends how her daddy makes her the best pancakes in the world…LOL.
Seriously though, to have the patience and the thoughtfulness is priceless. When you mentioned about using the jam for coloring, I was really impressed, that you didn’t just grab the 1st easy thing, but rather try to make them with some heart.
It wasn’t intill reading this that I had memories of my Mom making my initials or some silly letters or something. I had “Totally” forgotten, I was so young at the time, but as I read this alot of that came back and I can clearly remember how happy/excited I was when I got them like that.
Funny how those memories are buried back in there somewhere, actually got a nice smile just thinking back, after you triggered it with you site.
